The agave used for Chini Silvestre was 100% Wild Cupreata , which was cooked longer and was all capon. After its cooking, it is left to rest for almost a week, more bagasse is used in the vats that are formulated, and all the processes are treated more delicately, and the distillation cuts were different than other batches.
